Healthier Pumpkin Pie recipe
INGREDIENTS: 1 (15 oz.) can pumpkin
2/3-¾ cups of Agave nectar or honey
2 tsp. pumpkin pie spice
1/8-¼ tsp. salt
1 ½ cups of extra firm tofu, water packed (about ¾ of the block)
1 Graham cracker or regular pie crust
Blend all ingredients together in blender until smooth. Pour into crust, cover edges and bake at 350 for 50 minutes or until mostly set. The pie will continue to firm up as it cools.

Mix flour and salt with a fork — in a separate bowl, mix hot water and oil, and then add to the flour mixture. Avoid overworking the dough. For easy cleanup and transport to the pie plate, roll the dough between sheets of wax paper.
